They say a British person’s first words are either “tea, please” or “sorry.” For me, it was probably something about a Sunday roast. I grew up in England with a mind for managing people and a knack for making a bit of a mess in the kitchen. My mum’s recipes were my starting point, but a healthy dose of curiosity (and the odd kitchen disaster) taught me everything else I know.
My career has been spent managing the glorious mayhem of high-pressure kitchens, in a wide variety of settings. From corralling crews in remote hunting and fishing camps, to navigating the galley on sailing charters—I’ve learned that the most profound flavors are often the most straightforward. You won’t find any culinary snobbery here, just honest food that tastes as good as it looks—which, by the way, is fantastic.
When I finally get a moment to myself, you’ll find me on a riverbank here in Montana. People assume it’s a peaceful hobby, but between the wild weather and the stubborn trout, it’s really just a different kind of controlled madness.
